Haha, no, god, if your coq au vin contains mould you've been served some pretty dodgy food. Blood isn't so bad - you can find it in small quantities in some soups and it's not as disgusting as it sounds. Raw blood is, though. Anyway, most places will thicken coq au vin with roux.
Also, the poncey-sounding coq au vin is relatively simple peasant food, it's not exactly something I would call bourgie food. Though it is something of an open question if a wage worker could afford it.
I think people tend to assume French food is fancier and more expensive than it is, partly because of the pretentious use of French names in English. It's the "pedicabo ego vos et irrumabo" effect (how things tend to sound dignified in Latin).
