What do you think about causing serious injury/death to someone who's commiting a violent crime against someone else? Should you be punished?

example. You a walking home with a canoe paddle (about 6 foot long) and you encounter someone trying to rape someone and you decide to sneak up on them and thrust a 6 foot long piece of carbon-fibre through their skull (kills them instantly.) Should you be punished?

Or is a much better idea to make sure they notice you when you're in range so they point a knife/gun at you then put the paddle through their skull and argue it was self defence.

What you are describing is not self-defense but vigilantiism. All I can say is that even though a lot of people do not like guns you will find a significant decrease in crime in areas where they have allowed concealed carry to the public. You will also find a drop in firearms involved accidents usually.
Ask not what your country can do for you, or what you can do for your country. Ask what you can do for one another.

In the act of defending oneself or another minimal necesary force should be used. However, it is probably impossible for another to make an interpretation of whether an act WAS just that, or whether excessive. It is something that must be completely to the discretion of the person at the time.
In the scenario you give the bearer of the canoe paddle should attempt to debilitate without killing.

Actually very close to where I live (probably only slightly more than the distance it is between where I am and the back door of my house) someone did intervene to stop someone being raped but they didn't use violence.
