If you paid attention to the post I quoted, you'll realise my point was essentially that a species, in this case humans, can't evolve at all if it becomes extinct. Natural selection needs something to select.

Evolution won't help you there. The selection pressures don't exist for humans to develop gills, and in any case, you've already been born.
