A bit Eurocentric, but then that's how I roll. In no particular order:
Philip II Augustus: Revived the fortunes of House Capet and set France on the road to greathood... largely by kicking the English out of France (they'd be back) and nicking loads of land. May have scored Lionheart as well
Charlemagne: Nice guy, conquered most of Europe and had himself crowned Emperor of the Romans... despite not ruling Rome and there already being an Emperor in Constantinople. What have you done today?
Napoleon: So I have a thing for Frenchmen who conquer Europe. You all know this guy already
Mithridates VI: Back in the day nobody dared to piss off the Romans... never mind get into three separate wars with them. After finally being beaten in 63BC he tried to commit suicide by poison... only to find that his previous years of immunising himself to it had been all too effective
Caesar Augustus: The original (Augustus, not Caesar). I've always had a soft spot for Trajan but Augustus is the Emperor they're all measured against. Sort've like Sean Connery
Ivan the Terrible: So badass they named a town (Grozny) after him. Still, look past the name, his bullying demeanour, filicide, rapes, and general despotism and you'll find a shrewd statebuilder who laid the foundations for Moscow's centuries of dominance
Baibars: True, he destroyed at least two Crusades, wiped out the Kingdom of Jerusalem, and stopped the Mongols dead at Ain Jalut... but Baibars greatest achievement was surviving 17 years at the head of the notoriously regicide-loving Mamluk sultanate. Respect

Otto I: If you're going to choose a German then it might as well be the man who established (more or less) the Holy Roman Empire we all know and love. Otto wasn't much of a statesman but he know how to wield a sword and grind his opponents into the dust. Which was pretty much what you wanted in the king back in those days
Cnut the Great: What's not to love about a Dane who invades England, forges a brief-lasting empire across Northern Europe, and tries to hold back the waves? Probably not as influential as William in the long run but still a character to admire
