Motorcycle Diaries is obviously the first.

Then Guerrilla Warfare

Then Reminiscenses (spelling is wrong, I know) of the Cuban Revolutionary War

Then the Congo diaries (which weren't published until recently, but nonetheless were originally written in 1965)

Then the Bolivian diaries

I haven't read all of them in their entirety, but what I have read has been very good; the Motorcycle Diaries is a fun read, but doesn't offer much in terms of political strategy. I was actually somewhat offended when I read it (in the original Spanish; the English version may be abridged--I don't know) because he was a bit stereotypical and self-absorbed at that stage of his life. But thankfully, he changed...Guerrilla Warfare is excellent and the Congo diaries are also interesting, since you don't hear much about that history.
