I'm a sucker for violins or strings used well in rock-type music. "Used well" means creating that little moment of tension on a 7th note, the legato sort of swing up into the tense 7th and then letting the guitars go back to a 1st note/major chord. It's absolutely best at the musical climax of the song, maybe the last chorus.
This was done really well in The Arcade Fire's "Intervention" (album Neon Bible) when they do it near the end.
So, what are the little things you guys like? A certain chord progression, a technique?

Lyrics are quite important to me, The Doors for example had some deep poetic stuff.
I like it when lyrics make you think about what they really mean.
In rock and ofcourse blues I always like bluesy guitarwork, like Clapton or Hendrix.
I also like it when a band does something that according to most people contradicts, like Black Sabbath's loud, angry, paranoid anti-war songs that talk about things like nuclear anihilation as opposed to the flowerpower postivity for peace of John Lennon (wich I dig too, but not as much as Sabbath).

I love distorted drums- for instance, "this shit will fuck you up" by Combichrist.
I also love wall-of-sound shoegaze rock, or anything that has a 'vast' feeling.
For classical music, I love tempo rubato stuff in late romantic/impressionist music, with lots of swells; complicated chord progressions, etc.
I like good lyrics, but dumb ones are ok if the music is still good. (as long as it isn't obnoxious shit about making money)
