Anyone have any good books discussing the state of Israel, either in general or in relation to the Palestinians and/or U.S.?

I'd say Ilan Pappe's works on Israeli-Palestinian issues are interesting.

On Ilan Pappe, here's (http://kpfa.org/archives/index.php?arch=20456) an hour long speech about his new book and covers quite extensively the Zionist project. He is an Israeli historian by the way.

The Politics Of Dispossession covers a lot of issues of the Mideast starting with Palestine, moving to Lebanon, and Iraq, and some other related topics.
