On May Day, me and this one girl were talking about getting a walkout together to protes racist immigration policies.
So what's a good way to go about organizing a walkout in a week and a half?

Put up posters everywhere telling other people to do it (and replace them when they are pulled down ...), hand out flyers everywhere, and generally tell people to join you.
On the flyers and posters explain why people should walk out, and be prepared to justify yourself to all sorts of people (as I'm sure you are used to by now).
On the day, get up, walk out. Smoke a joint.

Check the May Day site to see if there are going to be any protests in your area.

I'm assuming this is for school correct? These are difficult because the school has some authority on their own grounds, but they can not stop you from a peaceful protest if enough people do it. For example, at my school students did a walkout because the school administration would not allow students to have mohawks or colored hair(Wouldn't it be great if students did this for something more political?). They started posting flyers on the walls and putting the word out like a day before. Next day, everyone walked out, even students who didn't not even care about the hair(mainly to get out of class). Best thing to do however is also check your rights as a student. This site might help: http://www.splc.org/
