Just try to stick to the albums most people who like those bands but are not "progheads". Most prog sucks but the best prog artists had their moments. There are millions of "prog" bands, but most of them have no ideas of their own (or even the required skills with their instruments) so they resort to pretentious concepts and ripping off the good bands (especially Genesis and Yes). So I'd suggest you start with the pre-1975 albums of bands like Pink Floyd, Jethro Tull, Genesis, Yes, King Crimson, etc. (excepting for Pink Floyd's "Animals" and King Crimson's "Discipline", some of the few great albums by these bands since 1975), although some of them (like early ones from Genesis and Yes) are not very important and others (like "Tales From Topographic Oceans" or "Lizard") can be pretty lame. I don't feel like making a list but browsing the internet you can find some help in choosing what to get. Some old prog bands like Van der Graaf Generator, Gentle Giant and Camel have their moments too, and Porcupine Tree is a decent post-Pink Floyd band. Oh, and Caravan is a good band too. Emerson, Lake & Palmer is closer to being "crap" so be careful. Other bands who had their moments are Rush, the Moody Blues and ELO, but they are not so "prog" or "good".
I also recommend you to try more "experimental" artists like Zappa and Captain Beefheart, and the "krautrock" scene. Then there's stuff like "post-rock" which is sometimes linked with "prog" but I don't feel like talking about that right now.
