I'm going to be graduating from high school soon and I have been very interested in majoring (or minoring) in Latin American studies, African, American studies, political science and spanish. Besides political science, I want to know what type of career I could possibly pursue with the other three fields. I'd also like any suggestions about some good colleges in NJ. I'm specifically interested in Drew university.

You can pursue a job in regards to international development - such as working for NGOs and other sort of groups.
The limits to those are endless as there are groups for anything and everything in almost every country. Your education on Latin, African and American studies would help you with your position in these NGOs, especially as an educator or planner of events and activities. Your background in Spanish would give you a huge advantage if you really want to get involved yourself.
One school you should have looked at is Trent University in Peterborough Ontario. You can take International Development and Political Science here along with your Spanish. There are also very good cultural courses, especially African history. International Development also offers you the opportunity to go to Ecudor or Ghana during your third year to continue your studies and get some hands on experience in the field. It also helps you get contacts for post-grad journeys.
