A Kind of Magic - almost a soundtrack to the Highlander films. The Kurgan's theme is superb.

Forrest Gump had a rather good soundtrack; but for whatever reason, they neglected to include Hendrix in it!
As far as score goes, I love the music to the Star Wars films and Enemy at the Gates.

I like Rufus Wainwright's version of Across the Universe, and Eddie Vedder's You've got to Hide Your Love Away, and Julia by Chocolate Genius.
Sarah McLachlan also sang Blackbird pretty well.
