First and foremost, listen to everything by Oudi Hrant.
Look for New Jazz music of the 50's that tied in with Middle Eastern Themes as well.
Ahmed Abdul-Malik, Dizzy Reece, Yusef Lateef.
Lot's of facets to get involved in this stuff.
Oud Hrant firstly though. Definately

HOLY SHIT!!! someone else who listens to Khaled!!!!!!!!!
WOOOHOOO!!! fuck yeah, bout time I met someone else who listens to khaled!! I absolutely love his stuff!!! I have ordered "Khaled" "N'ssi N'ssi" and "Sahra"!!!
lol 85% of my total songs are from the middle east or the Maghreb (nth. africa)
Depends on what you are looking for really. If you are looking for modernish songs in traditional arabic style check out Najwa (sometimes spelt Nagwa) Karam, hell just check her out!! she is an awsome singer and has some amazing songs. in a similar vein is Nawal Al-Zoughbi, although alot of her stuff is more chilled out i guess you'd say then Najwa's.
For some good classical arabic opera you definately can't go past Fairuz or Warda Jaza'iriya, or even the late and grwat Oum Khalthoum, although some of her recordings date back to the 30's so sound quality can sometimes be an issue with her songs, but good nonetheless.
If you're after 60's arabic nostalgia stuff check out Nagat. I strongly reccomend you get the song "Ana Baashq El Bahr"!! it is really really cool!
However if you are looking for more mainstream, i guess more western arabic music, then check out some Cheb Mami.....he's a bit hit and miss with me, has some really awsome songs, and then others that leave a bit to be desired. But check him out, and yeah like i said, get a few of his songs before you decide whehter or not you like him. I reccommend "parisien du nord" or "au pays de merveilles"
also check out Samira Said, she has some good songs, and a cool colab. with Mami is the song "Youm wara Youm"
well glad i found someone interested in the same type of music as myself. Send me a PM if you want any more info or chat about the wonderful music from the middle east.......oh and the artists i have mentioned here are just the barest tip of the iceberg!!!
Comrade BNS
This is not Middle Eastern, but you should definitely listen to...
Nusrat Fateh Ali Khan.
He is Pakistani. He did some songs for the movie "Dead man walking" also.

Does Indian music count? If so, I'd like to mention the fact that Ravi Shankar is a fucking god.

Melechesh
They make some very weird Messopotamian themed black metal
It's awesome. And normally I don't even like black metal.
I'd recommend the song Caravans To Ur. Very pleasant to listen to.

Er... If were talking about traditional music, there is a good singer called Ibrahim Tastilles (sp?). I downloaded his song "Allah Allah" from Kazaa and it was pretty good.

I typed "Bedouin" into Soulseek and came back with an amazing 10 minute-plus song based around percussion.
search for things like "Djembe" also for nice percussive music.
Try this site (http://www.e-greenstar.com/Music-Sample/). I just found it myself, so I haven't downloaded anything, but it looks interesting.

middle eastern music?
Ya mean Raļ?
Rachid Taha.
It's a beauty for the ears. Mixing traditionnal and classic Raļ with damn good guitar riffs. Try the tracks on Diwan and Rock & Raļ.

You're not a goblet drummer at all are you Canikickit?
I confess to playing a bit of Darboukka.
For guarenteed goo percussive songs you can't go past Hossam Ramzy...the sultan of swing! he has worked with everyone from Khaled to Robert Plant and Jimmy page. as well as his own stuff......worth a listen!

Cheb Mami
Khaled
I especially like Cheb Mami. If you're into rap, then I'd suggest you buying Rim-K's (http://www.rimkdu113.com) album "L'enfant du pays". It's rap mixed up with raļ and chaābi. I can't stop listening to it.
