Haha, no, god, if your coq au vin contains mould you've been served some pretty dodgy food. Blood isn't so bad - you can find it in small quantities in some soups and it's not as disgusting as it sounds. Raw blood is, though. Anyway, most places will thicken coq au vin with roux.
Also, the poncey-sounding coq au vin is relatively simple peasant food, it's not exactly something I would call bourgie food. Though it is something of an open question if a wage worker could afford it.
I think people tend to assume French food is fancier and more expensive than it is, partly because of the pretentious use of French names in English. It's the "pedicabo ego vos et irrumabo" effect (how things tend to sound dignified in Latin).

Eating lobster is uncivilised, since you have to crack the shell, pull the meat out, suck it out of claws, why don't they just give us a rock, a pelt and a picture of Gerry Healy so we can dine like some sort of barbaric proto-human caveman.
And to add insult to injury, lobsters are generally less flavourful than other kinds of crustacean you can eat.

It was actually really good. The soup was made with plenty of ginger and scallions, and some additional vegetables. It also had bits of jinhua ham and braised chicken for the broth.
The shark fin itself doesn't have much of a taste. It DOES have flavor, but its a very subtle flavor. It's mostly eaten for the texture, which is kind of gelatinous but also crunchy.
But the thing about shark fin is that its one of those foods that may not have much of a flavor itself, but like avocado if you add it to a dish it enhances the flavor of everything else in the dish.

Blood, as a part of someone's diet, exists in many cultures, such as my own. From a Eurocentric perspective, I can understand it can be a confronting thing to consume, but I think the "bourgeois" element in dietary consumption more stems from what we choose not eat, as compared to eating whatever the fuck you can. Western social mores dictate which parts of an animal we can eat, for example, but when you are truly poor, you eat everything. That's why "exotic" people eat "weird" or "gross" things.
But anyway...
What I'm not a fan of is this obsession with so-called "super-foods". :mad:

The interesting thing about fine dining restaurants where the richest of the rich generally eat is that even the owners do not make much money off of them. In most cases, the head chef will open up a burger joint somewhere use his/her reputation to advertise it, and make bank there since ground beef and a bun is incredibly cost effective whereas tuna at most sushi restaurants cannot even be sold at a high enough price to break even with the food costs. Hence, why you see Ramsay Burger all over the place.
In the end, the sad irony about prole food is that it mostly strengthens the bourgeoisie. It is not the fine dining restaurants that dominate what we know as food, it is the McDonalds, Pizza Huts, and KFCs.

I actually love trying gross-sounding food for some reason. The more disgusting it sounds, the stronger the urge to try it. My partner had me try tacos de tripa recently, which wasn't nearly as exciting as it sounded. But yeah - brains, blood, testicles, eyeballs... I'm totally down.

The type of food people eat and why people eat it is dependent on a huge multitude of reasons and is just such a dynamic part of culture that it would be too difficult to describe what exactly characterizes bourgeois food. I'm sure some nerd deeply into acadaemia and sociology would have a categorization but really just what exactly constitutes bourgeois food is just somethin' ya either get or ya don't.
Anyway I try to avoid these places but every time I go to the theater I look around for a restaurant that isn't artsy fartsy but it's difficult especially when one is around a theater and I get duped.

I think bourgeois food is a fabrication of your mind. I don't think food can have a social class.

Fair call. Many different European countries appear to have their own version of thus. But I was making a generalisation, not without exceptions. It actually seems besides this particular food, there are also other blood-related foods consumed in Europe as well, but hard to say how popular or widespread.
What I can say for sure though is, it's prevalent in various Asian cuisines, and some of my African friends are evidently well acquainted with it. Nothing like some blood cubes to go with your noodles.
But I'm with you, blood sausage is pretty good.

What you are talking about is Haute Cuisine. It is the way food is prepared as well as certain ingredients which are usually made or kept scarce. But most of it is ambience, food lay out and skill in preparation and a huge dose of pretence.
Most of this stuff you can prepare at home if you know how to cook and if you can dose your ingredients right for about a fraction of the price you would pay in a restaurant.
Coq au Vin is basically ******* in Wine. *******s are expensive because there are few of them. Mostly because the male chicks are fed to a woodchopper because they don't lay eggs.

Well to be fair...it seems you are equating Haute Cuisine with New Age/Fusion cuisine for the pretender Yuppies and Nouveau Riche. Not exactly bourgie food...more like upper middle class "lets make pretend we are classy" food.

I love Kebabs, but been cutting them out as I want to avoid trans fats. I pray for the day there is a healthy version.
I'm pretty much the only person I know in real life who has never been to an expensive restaurant, and I've never felt like going. I will probably give in eventually just to make my GF happy tbh.
I don't think there's anything wrong with the food - many times the food quality is high - but I can't justify the prices as I'm a stingy guy. I also put high-priced food in the same category as designer labels, not a fan of consumerism.

I was always under the impression that this is strictly an American phenomena. As far as I'm concerned, I'd rather have less food that contains more of the nutrients I need to get through the day, I don't particularly care for the act of eating and most of the time it's a chore. Which is why I largely eat canned foods (Soups, Meats, Tuna, etc.), sandwiches, etc. In a perfect world, I would love there to be a pill which contains all the nutrients and whatever you need in place of food - maybe you'd take it twice a day, and that's it.
But I must confess, I occasionally do indulge when I can. I don't know if this is 'bourgeois' food as far as how you describe them, but nothing beats a good steak. Also, upper class Italian restaurants and food are incredibly good.

Also, here is a little culinary-political anecdote: as during the revolution the export of red caviar from the Ket river had ceased, the stereotypically bourgie caviar was available in large quantities and cheap. Reportedly it was served in the Kremlin cantina and was one of the few kinds of food there that was any good (Trotsky claims the flour and barley were mixed with sand etc.).
Also, I propose that after the revolution, people selling "artisanal" food be given the death penalty. It's harsh, but it's the only way.

Let me repeat this in a slightly more luider voice: Taco's are ALWAYS awesome. No exceptions. The issue is that Some people (and I won't name names...rosa) can't handle the awesomeness of the Taco in all iTS forms and don't appreciatie the artistique value of Taco's.

more than that, it's just a surface indicator for what the quality of the food is going to be like. i'm going to trust more someone who has been cooking and eating this food for their entire lives vs. someone who thought this food was cool and just learned to cook it a couple years ago and happened to have the capital to start their own business.
that's not to say, either, that people who grew up with this food will always cook it best. i knew a dude with his own trailer and grew up with it around him, and his tacos were gross and salty. i've met more white people who fucked up mexican food, though, than i have mexicans fucking up mexican food.

In fact, to be honest....despite my love of Indian and Chinese food (hence the previous shark fin soup post), my personal favorite will always be good ol' fashion country cookin' (it's the proliest food you can get in the States).

Mexican food is bloody awsome. I really like tacos (specially dorados or with carnitas), burritos, fajitas, quesadillas, etc. but my favourite above all are tamales, those damned things are delicious.
BTW, what's the real difference between burritos and fajitas?

Not as much as in Bosnia, but you can find it in most bakeries and similar places. There is also a re~ally bad version they sell in the largest supermarket chain, which I believe is made with tissue paper and old knackered molasses. I eat it more than I should be eating it, heh.
I also tried the Levantine version, from one of my sister's Lebanese friends. No. Just no. It was so sweet I could feel my teeth rotting.

I like petit-bourgeois berries...the type they have at those little markets that pop up in car parks in my area sometimes. My family doesn't usually buy into that stuff (because it's really expensive, not because they're not "ethical," hippies) but we get fruit from there occasionally and it's really good. Especially the berries.

I think most "booj food" is some form of meat, so I wouldn't go near it anyway. I sometimes buy fancy cashew ice cream if I have the money, but mostly I just eat beans, rice, pasta, vegetables, etc. I guess there are plenty of overpriced, "middle class" vegan foods but I don't really go near those.

Yeah if you like to cook, you don't need any of those, but as a single household lazy fuck like me, I buy this fancy soy tempeh whatever stuff all the time. I gotta add, though, that food in general isnt really thaaat expensive in Germany.
