I found a butternut squash in the cupboard, that was from the fall. It was still good, so I roasted it up. Then I decided to make more with it. So I put the roasted squash in a bowl, and mixed in some flour and eggs. I cooked the batter on a griddle pan with cooking spray, and made butternut squash flatcakes. They're pretty good, and are good savoury or sweet. I amaze myself at times, with the crap I can whip up freehand. They might've been better had I had some baking powder, baking soda, or even some pancake mix instead of flour. But whatever, they're still good to me. :)
