All of these were in the plural. I put the asterisks by the ones that sound better.

No, beer is uncountable. However, it is used like a plural when it means glass/bottle/can of beer, much the same as tea, or coffee.
Deer is countable, but has an irregular plural, which just happens to be the same as the singular, much the same as fish, or sheep.

I don't count beer as beer. I count it by bottles or cans.
