Does anyone know of any particular kind of works that document the history of these two studies, maybe something like an anthology?

Something more about the history of them, so that I don't have to go through and read all the major thinkers.

There are plenty of history of philosophy books. I've recommended this in quite a few other threads but Bertrand Russell's History of Western Philosophy is rather good.

As for political economy, well, the classics are Smith, Ricardo and Marx, though there are plenty others (Say, Mill, etc.). I don't know of any "history of political economy" book I could recommend; I would really honestly recommend reading the primary sources. It's only a few books, after all (Smith's Wealth of Nations, Ricardo's Principles of Economy and Marx's Capital are the "big three," though as I have already said there's many, many more).

The Worldly Philosophers is great. Also, Marxist economist Duncan Foley wrote a similar book called Adams Fallacy.

Well Marx took extensive notes on all his predecessors and they published it in three volumes. I'll try to dig up a link for you.
