If the proletariat are open to the means of production and thus not subjugated to work under one house of production which capital makes them do, how would we maintain a division of labour in a communist society and in the workshop?

Do we need to?
The idea that one person only does one task over and over again is one of the problems of the capitalist organisation of 'work' (a somewhat problematic term in itself).
There are many many jobs that do not require any specialist knowledge that can be shared more evenly; why not share them?
Communism isn't about making people work like slaves for the greater good. It's about liberating the creative powers of humanity.

For Marx and Engels the problem with class society is that it is a forced division of labour where the means of production dominate over the producers, rather than the producers imposing their will on the means of production. In the latter case, i.e. under communism, a division of labour will develop as a consequence of the free development of every individual, pursuing their interests and abilities.
Obviously, in a free and equal society, it will be impossible to force people to do the shitty jobs (by denying them education and/or other resources necessary for their full development) and, therefore, these tasks will need to be integrated within the life of the community in a way which does not impede the freedom of individuals to pursue their self-valorisation. There are many means for delegating such tasks; the key point is that everyone participates freely in deciding how it is done.
