All too often I encounter self-proclaimed "socialists" who really just advocate a welfare state, and call it a "mix" of capitalism and socialism.
The danger with this school of thought is that it sounds all too reasonable; but how do I convince them that it is simply dressed-up capitalism?

By pointing out that the state is just another boss. If a worker works for a wage, he's a wage slave whether his boss is a CEO or a civil servant.
Engels dealt with all of this in the 1880s, by the way.

You simply point out that capitalism wouldn't go anywhere. The only difference between say, american now and under a welfare state is that a wide range of state benefits for everyone. But private ownership of production, capital, and resource collection still remain in the hands of a handful of individuals.

We don't, we merely assert that a mixed economy is still owned by the bourgeoisie regardless of the kickbacks towards workers.

Simple: What the bourgeoisie giveth, the bourgeoisie taketh away.
The economy has to be controlled by workers. Otherwise, the ruling class can always roll back social programs. Just like the have been doing.
