Because I don't trust revisionist bourgeois cuisine, and I sure don't want to take the risk of diverging from the standard orthodoxy set forth by dead german and russian people that lived 100-150 years ago, which I have chosen as micromanagement guidelines to my life when I was an angry teenager with indentity crisis, especially in cuisine.
