So I bought a bunch of couscous the other week on a whim/liked the name and have no idea about what to cook with it. I am aware that I enjoy couscous, however such delectable taste experiences with this rather leftfield carbohydrate option have never been from my own hands.

So as such please suggest recipes which involve couscous, things to put in it. None of that dried fruit bullshit if at all possible. KTHNX

Chicken or lamb tagine over couscous is very good. I did something similar to this recipe (http://dinnerdujour.org/2010/01/08/moroccan-chicken-tagine-with-lemon-and-mint-couscous/) a few weeks ago and it was excellent, except I used rice, because I am a rebel.

Garlic curried shrimp with mango couscous (http://www.fitnessmagazine.com/recipe/seafood/grilled-curried-shrimp-with-mango-couscous/) is great, too. I use coconut oil.

saute some vegetables (zuchinni, tomatoes, red bell pepper, whatever) in some red onion with garlic in olive oil. mix with the couscous, add some chopped up toasted almonds and sprinkle in some parsley

Don't cook it. What you should do is place it in a bowl, and cover it with boiling water leaving it for about 15 minutes. Then wrap it in a tea towel and squeeze the excess water out. After that mix in chopped cucumber, green onions, red pepper, red pepper paste, fresh parsley, dill, lemon juice, black pepper.

We ate it like this last night actually. It was pretty good.

Indeed, don't cook it.
I always heat water in a frying pan, than I crumble a stock cube in it. When it boils remove the heat, ad the couscous stir till you don't see water anymore, leave covered for a few minutes.
Eat with whatever you fancy. Lamb or chicken with dried fruit or spicy tomato sauce is nice...

Basicly you can just take any meal with rice or pasta and replace it with couscous.

I do it pretty similar to devrim but put feta cheese and tomatoes in too.

Good suggestion. My mum used to do this when I was a kid and I'd go fucking wild for it. In fact I might have to make some tomorrow.

Southwestern couscous ala AugustWest:

Couscous (however much you want)
1 can of black beans (drained and rinsed)
1 can of corn (drained and rinsed) OR frozen corn (prepared and cooled)
1 yellow or red onion (chopped relatively fine)
2 green onions (sliced thin)
1 sweet red pepper (chopped)
1 or 2 halepeno peppers (or any other hot peppers you want)
Cilantro (a handful, chopped well)
Cumin
Chili powder (optional, just a dash)
Bacon (optional, cook, let cool, chop)

Prep all the food
Pan fry the onions and peppers in the bacon fat (if you chose to use bacon) or in a bit of oil over medium heat
Add the beans and corn, cumin, bacon bits
Add the couscous (which you already prepped)
Cook for a minute or two to meld the flavors
Remove and throw in a big ass bowl
Add cilantro

throw it all in one big ass bowl.

Then add:
A small amount of oil and vinegar (not balsamic, use a white vinegar like champagne)
S & P
Hot sauce (optional)

Mix it all up and serve as either a main dish (very healthy) or as a side for something else.

NOTE: You can substitute rice for couscous and it's just as good (basically a modified red beans and rice).

Devrimoh sorry, I meant boil it.

if I don't just eat it plain with tabasco sauce on it, I usually put it in a tortilla roll, put tabasco sauce on it, put shredded cheese on it, put crushed red pepper on it, and put peanuts in it.

I'm very lazy when it comes to food preparation so a lot of what I make is based on whatever I can sprinkle onto my food the quickest.
