What would happen to critical installations like the nuclear power plant in the case of a large scale pandemic?
would they just shut it off or try to keep them running?
if a lot of specialised staff die, who would actually be able to shut it down?

Safety measures should automatically shut down the plant should things get out of hand.
But for the specialists on site it would be best if they remained in place during a pandemic so that they remain isolated from the outbreak and can not get infected.
Airway control would probably shut down though making civilian air transportation next to impossible.

In most cases computers can keep systems running under normal conditions, meaning if the rector is within operating limits the computer can manage it without human intervention till the reactor needs to be refueled.
If the computer sees the reactor is no longer operating within a acceptable range and not seeing human operators correcting the problem in a timely manner the computer will shut down the reactor automatically.
Yet like we seen in Japan the computers can't do jack shit if you throw many critical failures at them.
