post your favorite low-budget vegan recipes! even if you aren't vegan and never plan to be, it can be fun to experiment a few times a week...plus it will lessen your impact on the environment and the financing of a corrupt industry!

here is my favorite no-budget vegan snack...its so addictive, nice to snack on with your fingers, like popcorn!

BAKED CHICKPEAS:

drain chickpeas from the can. preheat oven to 350 degrees fahrenheit.

spread chickpeas on an olive oil-greased baking tray. give a few dashes of soy sauce, curry powder, paprika, sriracha (or literally ANY spice combination you can think of) and throw in the oven for about 20 minutes or until nice and crispy. so easy and cheap! voila!


here is a peanut sauce recipe that is amazing stirfried with noodles:

4 tablespoons peanut butter (i use smooth but whatever you want...)
small dash lemon or lime juice
a few drops of apple cider vinegar
a dash of soy sauce
BIG squirt of sriracha
cilantro to taste (dried is cool if money is really tight)
a small dribble of sesame oil
1 tablespoon of tofutti sourcream (optional but i love it. you can use regular sourcream if you aren't vegan i am sure, but i haven't tried it)
1.5 tablespoons of water

put in a microwave-safe bowl and microwave for maybe a minute or until it is all melty and easy to mix together. sorry a lot of it isn't in real measurements, but i just don't cook that way! friends have had no problems just winging it with my vague instructions though so, i wouldn't worry.

i'll add more later! i make a mean banh mi sandwich and piroshki!

i'm not much of a sweets person but sometimes a nice pancake is great...and apple pie with nice crunchy apple bits is just so..ugh <3___<3

I'm not actually vegan (just vegetarian) but my favorite pancake recipe is vegan and it's also quite cheap:

you need
-170g self raising flour (or ordinary flour with some extra baking powder)
-3 tbsp soya flour (not always easy to get and not soo cheap, but one package replaces a lot of eggs, so it's a good deal)
-1 tsp baking powder
-2 tsp vegetable oil
-about 350ml sparkling water

Just add all the dry ingredients in a bowl, add the oil and stir while you pour in the water. Adjust with flour and/or water until it's thick and creamy. Leave the mixture aside for 30 minutes and then fry it in a pan with some oil. You can also add some salt if you serve them savoury or vanilla essence if you serve them sweet.
