I don't know about them in particular, but a chief ideologue is basically the main person for establishing he theoretical position of a group.

Does that make sense?

A chief ideologue isn't the same as a main theoretician. The former tends to be more defensive and ideologically conservative. Suslov wasn't called the "red eminence" without reason. The latter tends to be more innovative. Examples include pre-NEP Bukharin and pre-WWI Kautsky.

But what is it that the daily activities of a so-called "Chief Ideologue" consists of?
The title is self-explanatory to a degree, so what Tommy4ever said I kinda could guess on my own accord. But as for Die Neue Zeit (clever reference btw) said raises some questions. How is it that a main theoretician DIFFERS from a chief ideolouge? Who ever held the title of "main theoretician"? In what ways were "ideolouges" more conservative and how is it exactly that the latter is more "innovative"?

A lot of what the chief ideologue does is plain censorship, really.
