I finally came out as a socialist to my mum. I feel I need to educate her about socialism.
What are some logical and good arguments to use?
What definition should I use?
What common misconceptions should I be aware of and prepare to answer?
What websites should I use to gain more knowledge?

She seemed quite calm about it. I think she was somewhat expecting it. She still has misconceptions like "Canada is socialist" or socialism=totalitarian dictator like evil Stalin, hitler and other men. Lol

That's kind of your call. If you have the sort of relationship with her and she respects you enough to actually want to listen, go for it. But having a constant argument where you don't have any common ground for discussion isn't too useful.

Well, if she thinks capitalism is great, I should hope you would be able to demonstrate how that's not the case, especially right now.
If she doesn't think capitalism is great, but doesn't think there's anything better, calmly explain that there's no reason it can't be. That throughout history people have believed theirs is the best possible society, like it or not; that throughout history, the ruling class who is vested in the continuance of the present mode of production tries to maintain it. Point out that there have been major and important victories when workers have been able to organize and seriously contest capitalism.
What definition should I use?
Well, that's up to you. What definition do you use?

"Canada is socialist"
Lol
I have no experience of telling parents about my Communist beliefs because I haven't done that yet :(
I'd reccommend explaining to her how the nations that people refer to as Communist really weren't Communist and what Communism really is. Tell her that you have studied Communism for years and know what you're talking about.
