well i think the title basically says what i'm looking for. do you guys know any easy, quick, healthy and delicious snacks that are vegan/vegetarian?

Its not quick...

But...if you have a garden grill and there is a hot day...

Take some aluminium foil.

Toss in the following (vary to taste)

Cut tomato in little pieces.
Cut Zucchini...or whatever you like
Cut onion
Basil
Garlic...one toe...(or more if you have social engagements later with people you hate)
Rosemary
Thyme

...and if your diet allows: goat cheese.

Put it in the foil and make a small pouch. Punch a small hole in the bottom...a very small hole (which will allow the inevitable juices to drip out a bit) or in the top (if you want to steam grill it...I have not tried that yet)....

Put it on the grill...for as long as you like...


Its really tasty, healthy and light.

My snacks are mostly fruit and veg or rice crackers with hummus, but I occasionally eat more interesting stuff. Most vegan cheese is awful (in the UK at least) but you can get slices that are meant to taste like processed cheese (Pure and Tofutti are two brands), which are really nice in toasties with a bit of tomato or onion.

Yesterday I made this on a slice of wholemeal toast (the measurements are approximate because I tend to make recipes up as I go along):
1/4 pack firm tofu, crushed up
3 mushrooms
Couple of handfuls of spinach
1 clove garlic
Turmeric, Cumin and a bit of Paprika

Fry the musrooms and garlic in oil until the mushrooms are soft. Add the spinach and cook until it's wilted, then add the tofu and seasoning.

I used to be vegetarian and I pretty much lived on potatoes, cheese and tomatoes. There's loads of ways to combine them and I guess you know that if you're a vegetarian but if you eat eggs there's a really nice pie I used to make a couple of times a week. So simple and tastes delicious it's almost comfort food.
Ingredients: 3 eggs, 1 cup of milk, 1 cup of grated cheese, 1 cup of pastry mix, some spring onions, 1 tomato.
Method: Combine all the ingredients except the tomato in a bowl. Pour it into a lined round cake pan with baking paper. Decorate with tomato slices. Bake for 40 minutes at 180C. Seriously thats all. Its YUM :)

not an snack more an dessert:
pear (and/or other fruit) in an bowl, heat oven or grill, put some "after eight"s on top of the fruit, put ver shortly in oven or under grill unitl the chocolate mints is melted but the fruit is still cold.
