J Dilla is probably the best example. He died nearly six years ago now, and made beautiful, deep, soulful and psychedelic beats. Apparently even on his deathbed he was making beats. The thing about Dilla is that the imperfections are deliberate; at first his music sounds sort of haphazard and 'wonky', and that not only makes his music instantly recognizable, but gives it a very human feel. Ghostface, MF Doom, even Drake, have all acknowledged Dilla's brilliance.

I get quite bored of hip hop instrumentals (and most others, except old school Grime stuff), but sometimes they are good to listen to while reading. i really like this one

had that dilla phase for sure. listened to nothing but donuts for days and days on end when i first heard it. that album's insane...haven't played it in a while though
as far as these newer cats go, flylo is the first one that always comes to mind for me. probably for good reason. here's a few others i've heard though:

these last two aren't instrumental, they release mostly instrumentals though. it's some glitch-hop type stuff. just thought i'd post these cause they're dope and i'd be willing to bet that this type of production has a big future in hip-hop...

quite like instrumental hiphop;

gaslamp killer is my shit. Most Brainfeeder collective stuff (flying lotus, nosaj thing, gaslamp killer, Teebs,) is also my shit.
Don't forget RJD2s instrumentals. They can be pretty tight
