Other than various internet sources, I know little on Castro's theories. If there is any documentation, I would love to see some of Castro's economic theories for Cuba, or, if not, any of his theories/speeches would be fine.

I just saw a book the other day containing letters that he wrote. Forget what it's called, but it's new. It being available at Barnes and Nobles has me scrupulous to it's authenticity though...

Cuba's International Foreign Policy: 1975-1980 is a collection of speeches by Fidel that's of some interest.

My Life: Fidel Castro with Ignacio Ramonet is a great place to start. It takes the form of a book-long interview, and as well as providing some excellent insights into the Cuban Revolution, gives some wonderful nuggets to use while defending Cuba on areas such as LGBT rights and dissidents.

Ramonet, a Spanish journalist and former editor of Le Monde Diplomatique, spent hundreds of hours interviewing Fidel from 2004 to 2006, and the book's draft was annotated and reviewed by Fidel right up to publication, through the worst months of his illness.

Helen Yaffe's book is quite good but it's about Che and economics, not specifically Fidel Castro.
