For the anarchist movement in southern in Spain in the '30s there's The Anarchists of Casas Viejas by Jerome Mintz and chapter 5 of The Spanish Anarchists: The Heroic Years by Murray Bookchin.
There's a lot of material about the EZLN, but a few to start with are The Chiapas Rebellion by Neil Harvey, the three books by John Ross (journalistic narratives covering the uprising from 1994 to 2005) and The Zapatista Reader edited by Tom Hayden.
