That's what the butter's for, in my opinion. It also has the advantage of being more flavoursome than plain old salt. And it goes better with sugar.

I always thought "porridge" made with water was called gruel.

I've not tried butter, I may do so. Also I have the salt instead of sugar because I don't have an enormous sweet tooth like you ;)

I thought gruel was a thinner type of food. Porridge with water is still quite thick.

I use a knob of Clover spread (http://www.dairycrest.co.uk/our-brands--products/spreads/clover.aspx), which although it technically isn't butter, does the job of butter pretty well most of the time, I find.

Porridge must be cooked with salt to obtain the correct flavour. Those eating porridge outside Scotland have been know to cook it without salt and indeed eat it with sugar or even syrup, which is a habit which would turn the stomach of any Scotsman.

Making it with salt is the traditional Scottish way. The traditional spelling would be 'porage' as well I believe, in the same vein as 'whisky' vs 'whiskey' etc.
