Quite interesting actually. What are his one or two defining albums, or the ones that I should hear first?

Well Oxygene was his best known work and magnus opus, to be honest i wouldnt be aware of his 'second' best.

The thing about JMJ was he was completely original, no-one was doing this before him (it would be easier to list those whom he inspired) and he was doing it a good 20 years before the likes of Robert Miles, Fat boy slim and Moby.
